Shawn, as far as permanent toppers go, there is a product called "Dry Cover Up" that is thin vinyl where the excess is torn away after embroidering. It stays in the towel forever. Another permanent topper is tulle that you can buy in a color that matches your towel.
If you are using a program where you can set parameters, such as Monogram Wizard Plus by Needleheads, they allow you to set a change of density. You might want to go up to 120% for a towel, which will help hold in the pokies.
