I tend to put in filler text and send it to them. Then the ball is in their court to get me the text they want to use, and it withstands scrutiny from everyone on the client side.
About the client, next time they make a request that wasn't quoted, let them know it will change the project and include a quote for the change. I wouldn't dump the client, though. Just make sure you never work with them again.
